Stuffed Bell Peppers

Sometimes I don't have a meal in mind, but a quick look through the fridge and pantry and I can usually throw something together pretty easily. This was one of those nights.  I didn't have all the ingredients I would have liked, but it still worked out pretty nicely
Stuffed Bell Peppers
Bell Peppers
Quinoa (or rice)
Soy 'ground beef' (or real meat)
Corn
Cheese
Salsa (or marinara sauce)
*optionally top with sour cream and add other ingredients like blackbeans 
Directions:
  • Pre heat oven to 350F
  • Prepare cooked quinoa, ground beef, and corn/veggies.
  • Cut tops off bell peppers and clean out
  • Mix together ingredients to be 'stuffed' and add to bell peppers (add in salsa/sauce if desired)
  • Place on a pan or in a casserole dish and top with cheese and salsa/sauce
  • Cook for 45 min- 1 hour.
  • Add more salsa/sauce (or sour cream) when done cooking
  • Eat & Enjoy!
Lesson: If you don't have all the ingredients you want, you can still make a good meal with a little creativity and improvisation.
