A Very Vegetarian Thanksgiving!

First of all, I apologize for the extreme lack of updates.  Between moving across town, school, and beginning training for a part-time job I've been a little busy.

I cannot help but thinking of all the Thanksgiving goodness coming up.  As a vegetarian (okay, okay a pescatarian really) the turkey is the last thing on my mind though.  I've always been much more interested in the potatoes (sweet, mashed, twice backed, scalloped, etc.), dressing, cranberry sauce, green bean casserole, assortment of veggies, and of course anything pumpkin!  Carb addict much?

I came across this interactive article in the New York Times called Well's Vegetarian Thanksgiving.  I am without a doubt going to by trying some of these, the maple-roasted brussels sprouts in particular.  It makes it even better that a lot of them or on the health conscious side...well for Thanksgiving that is.

Or maybe the honey-roasted accorn squash?


Grapefruit and avocado salad too; I can't wait to try that!  There recipes can last throughout the season, not just for Thanksgiving.  How could I forget dessert?  Try the chocolate-pumpkin bread pudding.  I'll probably stick to my pumpkin cheesecake recipe this Thanksgiving, but it sounds like a great dessert any other day of the week.

Now you tell me, what's your favorite Thanksgiving staple?  What can't you live without?
